Homemade Chicken Dumpling Soup

Last night, I cooked Homemade Chicken Dumpling Soup and a couple of other dishes to get through our busy weekend. Literally, we are on the run but I plan on only eating out once in between our five hockey games, two 40th birthday parties on the same day at same time, church, and creatively figuring out how to get one child to a sleepover. With a crazy schedule like this I can only survive with preplanned dishes.

It is the perfect time to test out my new Lock&Lock Cookplus Speedcook 6.3-In Sauce Pan. Speedcook. I like that name. It implies cooking speedily. I need that. This pan is designed to perfectly cook ramen noodles. I look forward to having my children cook ramen noodles in this pot because it is a simple dish to prepare that will help them gain confidence in the kitchen and we now have the best tool to achieve that! LocknLock offers a Ramen Noodle recipe on their website. We haven’t had ramen noodles in ages and I didn’t have any in my pantry so I reverted to throwing leftovers together to create my soup.

Leftover chicken, carrots, celery, and a pinch of salt, pepper and cumin swimming in chicken stock is a really smart way to use leftovers and create a delish soup inexpensively. However, the dumplings are the rock stars of the soup according to my young boys.

Homemade Dumplings

2.5 cups of flour
4 eggs
2 tablespoons water
salt
(I double this recipe because everyone complains that we run out of dumplings and this is a happy leftover dish.)

Mix together with a fork until it starts to stick together. Using both hands knead the dough together until is it well mixed. It should be a huge sticky ball of dough.

Spoon dough pieces into a large boiling pot of water and cook 10 minutes after last spoonful has been dropped. Drain, rinse and serve with homemade chicken soup.

To prevent soggy dumplings in a crock pot, I am using our Speedcook pan to reheat our soup when it is needed. Speedcook lives up to its fast, efficient thermal dispersion. It looks like a heavy pan but I enjoy that it is lightweight. It takes away all my kids whining over washing heavy pots. I bet LocknLock didn’t even realize they are making children’s chores easier (wink, wink) and my life easier (yay)!

What’s different with this pan, besides cooking fast, than others you may already own? It has chopstick holders on the knob. Really! What a fascinating concept. It has inside measuring lines to make cooking easier (one less measuring cup to wash), a pouring spout to release water for easy serving, and the overturned lid can be used as a plate. A lid plate. Hmm, hope our Elf On The Shelf isn’t reporting back to LocknLock that Mom needs better stove manners. I would never stand over the stove and sneak taste test right out of the pot!

Thinking a backyard picnic eating out of our Speedcook with chopsticks and reading Maurice Sendak’s Chicken Soup With Rice would be perfect afternoon!
